This dish comes from a great musical jam playing in the background, a combination of tunes that get your fingers snapping and inject a happy go lucky feeling allowing your creative juices to fly.

I have always enjoyed good music and a great breakfast especially on weekends when you have a little more time to get the creative juices flowing. This dish comes from a great musical jam playing in the background, a combination of tunes that get your fingers snapping and inject a happy go lucky feeling allowing your creative juices to fly.
This breakfast uses my own bacon jam recipe and spices from The Warrior Blends to create a spectacular combination of complimentary flavors. Using the Tomahawk Warrior Blend to season my breakfast sausage gives me the sweet heat signature I crave. It marries perfectly with my Bacon Pepper Jam, eggs, cheese and micro greens.
As for the jam, it allows you to add the delicious flavor of classic bacon without the mess of cooking bacon and cleaning up the grease! Featuring a savory and slightly sweet flavor, this jam is a great addition to burgers, sandwiches, chowders, desserts or as a savory spread on your charcuterie board and pair with artisan crackers and top with goat cheese or brie!

Ingredients

2 eggs

1 sausage patty

1 english muffin

2 tbsp pepper jack cheese

1 tbsp water

2 tsp The Warrior Blends Tomahawk

1 tsp Boreal Pepper Blend

3 tbsp bacon pepper tomato jam
-
2 lb. tomatoes, seeded and diced
-
1 medium white onion, diced
-
½ cup granulated sugar
-
½ cup packed brown sugar
-
3 tbsp apple cider vinegar
-
2 tbsp minced fresh garlic
-
¼ tsp red pepper flakes
-
2 tbsp chopped fresh parsley

¼ cup Bacon n’ Pepper
-
1 lb. thick-sliced bacon, diced

Bacon Jam
Directions
Season both sides of your breakfast patty with the Warrior Blends Tomahawk seasoning.
Let the seasoning and meat talk for about 15 minutes
While your sausage is waiting shred the Pepper Jack Cheese and set aside.
Crack the eggs into a bowl
Add the 1 Tbsp of water, the shredded cheese and Boreal Pepper to the eggs.
Using a fork beat the mixture till blended and slightly frothy.
Place your sausage patty onto a warm skillet and cook the patty on Medium heat , flipping when browned
Place the English muffins into the pan along with the sausage to soak up the juices and toast in the frying pan.
Once the sausage and muffin are browned to your liking remove from pan
Pour your egg mixture into the hot pan
Using a spatula scrape the egg mixture as it cooks
Continue to scrape and bring it together into the center of the pan
Continue folding the eggs over onto themselves until slightly browned.
Remove from heat
Place ½ the bacon pepper Jam on the bottom bun
Add your sausage patty
Add your scrambled eggs on top of your patty
Add the remaining bacon pepper jam
Top with micro greens, then top of the bun
Bacon Jam
Cook the bacon in a large saucepan until crisp then transfer the bacon to a paper-towel-lined plate and discard the drippings.
Add the tomatoes, onion, granulated sugar, brown sugar, vinegar, garlic and pepper flakes to pan and add the bacon back to the pan.
Bring the mixture to a boil, stirring often. Let the jam simmer, stirring occasionally, until it thickens to a jam like consistency (approximately 1¼–1½ hours)
Add the parsley, Bacon n’ Pepper and salt to taste

Also goes great with Bacon and tomato slices.
For added heat use Jalepeno peppers
