Ingredients
For the Boreal Pepper Balsamic Vinaigrette

¼ cup balsamic vinegar

½ cup extra virgin olive oil

1 teaspoon Dijon mustard

1 teaspoon Boreal Pepper Blend or more to taste

¼ teaspoon salt
For the Salad

Mixed greens (arugula or spring mix work beautifully)

1–2 ripe pears, thinly sliced

¼ cup walnut halves
-
1 cup blueberries
-
½ cup crumbled Gorgonzola cheese
Directions
In a small bowl or jar, whisk together dressing ingredients.
Arrange greens on a platter or in a large bowl. Top with pears, blueberries and walnuts, sprinkle with gorgonzola.
Drizzle with the Boreal Pepper balsamic vinaigrette just before serving. Toss lightly and enjoy.
Tip: This vinaigrette also pairs beautifully with roasted squash, grilled chicken, or warm grain salads.

This is not a make ahead dressing as the oil and vinegar will begin to separate in about an hour.
Replace blueberries with dried cranberries or cherries but I would add 2 crushed garlic cloves to the vinaigrette if you do so and replace the walnuts with candied pecans.
