We ran across this recipe and of course made it our own. I was stunned at how moist the pork loin was and the rich, caramelized onions made it a perfect weekend dish. I have never had a better pork loin dish in all my days.

This dish is proof that onions, when treated with patience, can completely transform a meal. As they slowly caramelize, they develop sweetness, depth, and richness then a splash of fig balsamic vinegar halfway through takes them even further, creating a glossy, jam, like finish that becomes the soul of the dish. Paired with pork loin, the result is unexpectedly luxurious: tender, moist, and layered with flavor in all the right ways.

This, by the way, is our favorite fig balsamic vinegar.

Wine Pairing

This dish would pair beautifully with wines that can handle the sweetness of the onions and the richness of the pork without overpowering it.

Best Pairings:

Pinot Noir – earthy, silky, and perfect with caramelized onions
Côtes du Rhône – savory and balanced with just enough fruit
Dry Riesling – if you want a white, the acidity plays beautifully with fig balsamic
Viognier – floral and rich, a lovely match if served with roasted vegetables

Ingredients

1 Pork tenderloin (1.5-2lbs)
1 tsp Mushroom Infused Finishing Salt
1 tsp Boreal Pepper Blend
1 tbsp olive oil

For the Sauce

3 large sweet onions
3 cloves garlic, minced
1 cup beef broth
2 tbsp Fig balsamic vinegar
1 tbsp butter
1 tsp thyme
1 tbsp cornstarch

Directions

Preheat oven to 375
Bring the port loin to room temperature and truss the pork loin if needed.
Pat the pork loin dry and season with the salt and pepper. Let sit for 10 minutes.
Heat the olive oil in a skilled over medium-high heat.
Sear the pork loin on all aides (3-4 minutes per side) and set the pork loin aside
In the same skillet, add the butter and onions and cook for 8 minutes.
Add in balsamic vinegar, garlic and thyme. Reduce heat to low and cover for 10 minutes. Remove from heat and add the beef broth. If the sauce is too thin, use the cornstarch and bring to a boil to thicken.
Place the pork loin in a baking dish and cover with the onion and bake for 25-30 minutes.
Let rest 5 minutes before serving.

Recipe Note

Serve with mashed potatoes, carrots or green beans and a crusty bread to soak up the sauce. If you prefer, replace the vinegar with one tbsp Worcestershire.
